Day 36: Sausage and Pork Gumbo

This recipe is a family one that’s been passed down. However, we did it with a little twist today.

Chicken and Sausage Gumbo


  • 1 1/2 cup flour
  • 1 1/2 cup of margarine
  • 1 chicken breast
  • 1 package sausage/li>
  • 1 medium yellow onion
  • Ocra, to taste
  • 4 stalks celery
  • Cajun seasoning
  • Garlic
  • Salt and Pepper
  • Lots of water


  1. Mix the flour and margarine together and cook in a pot until it is a darkish color and smells kind of like popcorn. Make sure you continually mix it, or it will burn very quickly.
  2. Add the onions and celery, mix well.
  3. Add the water, seasoning, salt, pepepr, garlic and ocra to the mixture.
  4. Simmer for at least 6 hours.


Executive Decisions

  • We used chicken sausage and left over pulled pork in there instead of chicken breast.
  • Also, we switched the water out for vegetable broth

How was it?

Delicious! Kris was really wanting some gumbo, it’s his all-time favorite meal. The changes we made turned out well!
