Today we did a kelsey Nixon recipe, again, for chicken cacciatore. with any kind of knife skills, this meal is super simple. chop everything up, and do exactly as the recipe says. We have been trying to make this meal for a long time, but we have not gotten around to it. Finally, we will see what we think.
- possibly more garlic than the recipe calls for (and the other herbs might be a little off as well)
- We used baby portabella mushrooms
How was it?
I enjoyed the vegetables a lot, but the chicken was a little dry. I guess the 40 minutes of simmering was a little much.
Things We Would Change
- I would simmer it for less time, just so the chicken would still be moist.
- This might be good on top of pasta, maybe served also with garlic bread.
