Day 49: Asian Chicken Salad

This meal includes some good vegetables and has good flavor.

Executive Decisions

  • We added chili garlic paste, about 3 Tablespoons
  • Marinate the chicken for a few hours instead of 10 minutes
  • Instead of grilling the chicken, Kris pan roasted it in the marinade, and since I wanted the chicken shredded, Kris finished it in the slow cooker, so the chicken would still be moist
  • We added onion sprouts and bean spouts in with the chicken

How was it?

It was fantastic, Kris was especially surprised with how the vinaigrette worked with the cabbage. He is a ranch only kind of guy, and he really liked this.

Things We Would Change

  • Kris would have liked to have it spicier
